
Trained at the Hôtellerie Beau Rivage, then a 2-star Michelin establishment, on the banks of the Rhone in Condrieu, Pascal Chalamet subsequently worked at the Villa Régalido in Fontvieille in Provence, then at La Maison du Monde in Cogolin before joining the Hôtel Imperator Concorde in Nîmes. After several years in these establishments in the South, all well-known, the Chef decided to move to Poisson in Burgundy to start new adventures both on the culinary and hotel scene: a restaurant seating 50 and a charming hotel bearing the Relais du Silence label.
